Carrot is a root-crop known for its vitamin rich red/orange roots which are used in making foods and salads.
Red carrots contain a good dose of Vitamin A, which helps to prevent clogging of the arteries and thus helps to prevent strokes. Higher levels are found in Orange and Purple carrots. They also contain vitamin B, C and E as well as calcium pectate, which is a very good source of fibre, and they help to lower cholesterol levels. They are also very useful in the prevention of macular degeneration.

The bitter gourd (also known as bitter melon) looks like a cucumber but with gourd-like bumps all over it. As the name implies, this vegetable is a melon that is bitter.
Bitter gourd thrives in hot and humid climates, so are commonly found in Asian countries and South America.
Bitter gourds are very low in calories but dense with precious nutrients. It is an excellent source of vitamins B1, B2, and B3, C, magnesium, folate, zinc, phosphorus, manganese, and has high dietary fiber.
Small round gourd, also called baby pumpkin, is a vegetable grown for its immature fruit. Green colored and apple sized, it is a slightly sour fruit which can be eaten cooked, candied or pickled. Round gourd is regarded as super food for its numerous health benefits. It contains antioxidants like carotenoids and many anti-inflammatory agents, which help controlling blood pressure, heart diseases, and strokes and prevents cancer formation
French beans have a thin, cylindrical shape with plump indentations along their contour, outlining the peas inside, which are shelled tightly within the bean flesh. The peas, which are essentially the bean’s seeds, are a vibrant lime green in color, semi starchy in texture with a mild taste of the beans sweet and grassy flavors.
French beans provide less starch and protein than dried bean varieties, though they have higher levels of Vitamin A and Vitamin C.
Apple Gourd (‘Tinda’) looks very much like green apple, but has squash like taste, texture and seeds inside. It is considered to be mild when it comes to digestion and can be easily digested.
